3 Potluck Recipes to Impress Your Party Guests

Main Dish

Tex-Mex BBQ Brisket Sandwiches (14 servings)

Grocery List:
  • 1 fresh beef brisket (3-1/2 pounds)
  • 1 jar (18 ounces) hickory smoke flavored barbecue sauce
  • ½ cup finely chopped onion
  • 1 packet chili seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon lemon juice
  • 14 hamburger buns, split
How it’s done:
  1. Cut brisket in half; place in a 5-qt. slow cooker. In a small bowl, combine the barbecue sauce, onion, chili seasoning, Worcestershire sauce, garlic, and lemon juice.
  2. Pour over beef. Cover and cook on high for 5-6 hours or until meat is tender.
  3. Remove beef; cool slightly. Shred and return to the slow cooker; heat through. Serve on buns.

 

Side Dish

Crowd-Pleasing Taco Salad (10 Servings)

Grocery List:
  • 1 pound ground beef
  • ½ cup ketchup
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 medium head iceberg lettuce, torn
  • 2 medium tomatoes, diced
  • 1 cup (4 ounces) shredded Mexican cheese blend
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • ½ cup mayonnaise
  • ¼ cup taco sauce
  • 1 package (10-1/2 ounces) corn chips
How it’s done:
  1. In a large saucepan, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, oregano, chili powder, salt, and pepper.
  2. Bring to a boil. Reduce heat; cover and simmer for 10 minutes.
  3. In a large bowl, combine the lettuce, tomatoes, cheese, olives and beef mixture. Combine mayonnaise and taco sauce; pour over salad and toss to coat.
  4. Sprinkle with corn chips. Serve immediately.

 

Dessert

Potluck Banana Cake (12-15 servings)

Grocery List:

CAKE:

  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1-1/2 cups mashed ripe bananas (about 3 medium)
  • 1 cup (8 ounces) Sour Cream

COFFEE FROSTING:

  • 1/3 cup butter, softened
  • 2-1/2 cups confectioners’ sugar
  • 2 teaspoons instant coffee granules
  • 2 to 3 tablespoons milk
How it’s done:
  1. In a large bowl, cream butter and sugar with a mixer until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda, and salt; add to creamed mixture alternately with bananas and sour cream, beating well after each addition.
  3. Pour into a greased 13-inch x 9-inch baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.
  4. For frosting, in a small bowl, beat butter and confectioners’ sugar.
