  • 2 cups old-fashioned rolled oats
  • 1 cup oat flour (to make at home, process oats in food processor until finely ground)
  • ½ cup ground flaxseed
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsweetened applesauce
  • 1/3 cup honey or maple syrup
  • 1 egg
  • 2 teaspoons vanilla extract
  • 4 tablespoons butter, melted

Method

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a small saucepan, combine the ingredients for apples. Cook over medium-low heat for 10 minutes, stirring occasionally, until the apples have softened.
  3. In a large bowl, stir together the oats, flour, flaxseed, cinnamon, nutmeg, baking soda, and salt.
  4. In a separate bowl, whisk together the applesauce, honey or maple syrup, egg, and vanilla. Whisk in the melted butter.
  5. Pour the wet ingredients into the dry ingredients and stir to combine. Then, fold in the cooked apples and sauce.
  6. Place ¼ cup portions of dough onto the baking sheet. Gently flatten each cookie, as they won’t spread while cooking.
  7. Bake for 12-14 minutes until cookies are set and lightly golden.

  • 4 cups Granny Smith apples – peeled, cored, and sliced
  • 2 tablespoons butter
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon corn starch
  • 1 tablespoon water
  • 1 (17.25 ounce) package frozen puff pastry sheets, thawed
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Method

  1. Melt butter in a large skillet over medium heat. Place peeled, cored, and sliced apples into the butter when hot. Cook, stirring often, for two minutes.
  2. Add brown sugar and cinnamon and continue to cook and stir for two minutes.
  3. Create a slurry by stirring together cornstarch and one tablespoon of water. Add to the skillet and mix well. Continue to cook for one minute, or until sauce has thickened. Remove from heat.
  4. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  5. Unfold puff pastry sheets and trim each sheet into a square. Then, cut each square into four smaller squares. Spoon apples onto the center of each square. Fold over from corner to corner in a triangle shape and use a fork to seal the edges together. Place turnovers one inch apart on baking sheet.
  6. Bake for 25 minutes until turnovers are puffed and lightly browned.
  7. While the turnovers cool, mix the powdered sugar, milk, and vanilla in a small bowl to make a glaze. When turnovers are completely cooled, drizzle the glaze over top.
