Cheese & Bacon Wrapped Meatball Wolf’em

Grocery List:
  • 1 package of refrigerated biscuit dough
  • 4 jalapeno peppers
  • 4 oz cream cheese, room temperature
  • 10 meatballs, thawed
  • 10 bacon strips
  • 4 slices of cheddar cheese  (or your favorite)
  • Cilantro
  • Lettuce
  • Tomato
 How it’s done:

Wolf’em Cups

Coat your Wolf’em roasting stick with non-stick spray and place your favorite biscuit dough on the dowel. Rotate your Wolf’em stick over the campfire or stove, baking evenly until golden brown and set aside to cool.

Grill jalapenos over high heat for 6-8 minutes and place in a plastic sandwich bag for 20 minutes once they cool slightly. After 20 minutes, remove the skins and seeds from the jalapenos, dice finely and set aside. Place softened cream cheese into a mixing bowl and add diced jalapenos – gently fold to combine and set mixture aside. Wrap each meatball with one slice of bacon and insert a toothpick to keep it in place, then place each wrapped meatball in the microwave for 1-2 minutes until the bacon is cooked. Spread the cream cheese mixture into each Wolf’em cup, then line the sides of the Wolf’em with cheddar cheese. Place a bacon wrapped meatball in the center of the Wolf’em cup (it will be surrounded by the cheddar cheese) and garnish with lettuce, tomato and cilantro – yum!
