1. No-Bake Energy Balls

These energy bites are so delicious, they’re practically dessert. Chocolate and peanut butter combine with nutritious ingredients like oats and flax seeds for a decadent snack. Best of all, this energy bite recipe is easy to make.

Grocery List

  • 1 cup (dry) oatmeal, such as old-fashioned oats
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seeds
  • 1/2 cup semisweet chocolate chips (you can also use vegan chocolate chips or cacao nibs)
  • 1/3 cup honey or agave nectar
  • (Optional) 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract

How It’s Done

  1. Stir all ingredients together in a medium bowl until thoroughly mixed. Then cover and let chill in the refrigerator for half an hour.
  2. Once chilled, roll into balls about one inch in diameter. Then store in an airtight container and keep refrigerated for up to one week.

A bit tropical, and with plenty of flavor, these mango energy balls are great for an on-the-go snack.

Grocery List

  • 1 1/4 cup (150g) raw walnuts or cashews
  • 1 cup firmly packed (5 1/2 ounces or 155g) dried unsweetened mango
  • 10 pitted Medjool dates
  • 2 tablespoons (20g) shelled hemp seeds
  • 1/3 cup (27g) unsweetened finely shredded coconut (also known as desiccated)
  • (Optional) 1 lime, zested
  • Pinch sea salt

How It’s Done

  1. Preheat oven to 350 degrees Fahrenheit (176 Celsius) and arrange nuts on a baking sheet. Toast for 8-12 minutes or until light golden brown and fragrant. Set aside.
  2. In the meantime, add dried mango to a mixing bowl and cover with warm water (don’t skip this step or they’ll be too tough to blend). Let soak for 5-7 minutes or until soft and pliable, but not too soggy. Then drain, lay on a towel, and pat off excess moisture. Set aside.
  3. Add nuts to a food processor and mix into a fine meal. Remove from bowl and set aside.
  4. Add pitted dates and soaked, dried mango to the food processor and mix until a rough paste/sticky dough forms.
  5. Add nut meal back in, along with hemp seeds, shredded coconut, lime zest (optional), and sea salt. Mix until it forms a moldable dough. Add more coconut or hemp seed if it feels too sticky or wet. Add more dates if it’s too dry.
  6. Scoop out rounded tablespoon amounts and roll into little balls in the palms of your hands. Then roll in more shredded coconut or hemp speeds, or a mixture of both.
  7. Enjoy immediately. Then store at room temperature up to 3-4 days, in the refrigerator one week, or in the freezer up to one month.

paleo nut free energy bites3. Paleo Energy Bites (Nut Free)

For those with nut allergies or dietary preferences, these nut-free energy balls are the perfect option. Additionally, they’re sweetened only by fruit if you choose not to add chocolate chips.

Grocery List

  • 20 Medjool dates, softened (you can quickly steam them in a colander over a pot of water)
  • 1 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup shredded coconut
  • 1/2 tsp cinnamon powder
  • 1/4 tsp sea salt
  • (Optional) 1/2 cup raisins or dried cranberries
  • (Optional) 1/4 cup mini chocolate chips

How It’s Done

  1. In a food processor, add softened dates and then process until macerated.
  2. Add sunflower seeds and pumpkin seeds and then pulse until well chopped.
  3. Add coconut, cinnamon, and sea salt and pulse to combine, scraping down sides as needed. If too sticky, add additional coconut one tablespoon at a time.
  4. If adding dried fruit, add now and pulse just enough to mix in.
  5. Remove from food processor and then manually stir in mini chocolate chips if adding.
  6. Line a dish or baking sheet with parchment paper and scoop out mixture and roll into balls. You can also use a small ice cream scoop to keep them consistent. Refrigerate for 30 minutes to set.
  7. Store in refrigerator to maintain firmness.
