This recipe for campfire chicken fajitas is intended to be cooked over a campfire. But we won’t tell if you use an RV or camp stove instead! If you do cook over a campfire, use a heavy, heatproof pan, like a cast iron skillet.

Marinade Ingredients

  • ½ cup olive oil
  • ½ cup lime juice
  • 3 tablespoons honey
  • ¼ cup cilantro, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon hot sauce
  • Salt and pepper, to taste

Fajita Ingredients

  • 2-3 pounds boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 bell peppers, sliced
  • 1 large red onion, sliced
  • (Optional) 1 jalapeno, sliced
  • Olive oil, for drizzling on veggies
  • Small tortillas, for serving
  • Cotija cheese, for topping (optional)
  • Hot sauce, for topping (optional)
  • Sour cream, for topping (optional)

Directions

  1. Marinate the chicken for 12 hours before cooking. Whisk together the marinade ingredients, then combine the marinade and the chicken in a plastic bag. Refrigerate for 12 hours.
  2. Before cooking, prepare the peppers and onions, then toss them with olive oil, salt, and pepper.
  3. Heat a cast iron or heavy, heatproof skillet over medium heat. If cooking over a campfire, use a low flame to achieve a medium heat.
  4. When the skillet is hot, add the chicken and cook until the chicken is lightly browned. Then, add the peppers and onions. Continue cooking until the veggies are cooked through, but still crispy.
  5. If desired, char the tortillas on a grill grate over a low flame before cooking. Serve fajita ingredients in tortillas.

  • ¼ cup white vinegar
  • 4 garlic cloves, minced

Fajita Ingredients

  • 1 pound beef top sirloin steak, cut into ¼-inch strips
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 tablespoons canola oil, divided
  • Tortillas, for serving
  • Shredded cheddar cheese, for serving (optional)
  • Salsa, for serving (optional)
  • Sour cream, for serving (optional)

Directions

  1. In a plastic bag, combine the marinade ingredients. Then, add the beef and refrigerate for 2-4 hours to marinate.
  2. When ready to cook, heat a skillet over medium heat. Sauté the onion and peppers in one tablespoon of oil until cooked through, but still crisp. Remove and set aside.
  3. Drain the marinade. In the same skillet, cook the beef over medium heat with the remaining tablespoon of oil until it reaches desired doneness, about 2-4 minutes.
  4. Serve fajita ingredients in tortillas and top as desired.

  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Pinch of cayenne pepper

Fajita Ingredients

  • 2 green bell peppers, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 yellow or red onion, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 can black beans, rinsed and drained
  • ½ teaspoon garlic powder
  • Tortillas, for serving

Directions

  1. Preheat oven to 400 degrees.
  2. Arrange sliced peppers and onions on a sheet pan, drizzle with oil, and sprinkle with fajita seasoning. Toss the veggies until evenly coated, then spread out on the pan and bake for 20 minutes, flipping once.
  3. Meanwhile, add the black beans, garlic powder, and salt (to taste) to a small saucepan. Cook for 8-10 minutes until the black beans have thickened slightly.
  4. Serve veggies, black beans, and desired toppings in warm tortillas.
